One pan and seven ingredients are all you need for this One Pan Asparagus Egg Bake. An awesome veggie-filled and protein-packed breakfast option!
- 1 bundle asparagus
- 1 leek
- 1 clove garlic, minced
- 2 tbsp olive oil
- 2 eggs
- 1/2 cup Parmesan cheese
- 1 avocado
Chop asparagus into bite-size pieces and set aside; chop leeks up into small pieces as well.
Heat olive oil in a skillet over stovetop and add asparagus and leeks.
After 5 minutes or so, add garlic; stir regularly.
Once asparagus starts cooking more (turning golden brown on either side), use a wooden spoon to create two "holes" or spaces in the skillet so you are able to crack your eggs.
Crack eggs into skillet and allow time to cook
Remove from stove, add cheese and avocado.
